Part IX

Harvest & process

When to cut, how to dry, and how to store what you grow. Kitchen and medicinal crops only — restricted plants and poison-garden specimens have no harvest notes here.

Reminders

Harvest this week

A Monday-morning note of plants in season on this bench. On iPhone it is a native notification — it still fires if the app is closed.

On the website, the browser may ask to notify you.

How to process

Methods

Kitchen leaf

Chop and freeze

Basil, parsley, cilantro, chives, and dill lose the top note in a hang-dry. Chop, pack into a tray with a film of oil or water, freeze, then bag. That is winter pesto and soup, not a tea herb.

You will need

  • A knife
  • Ice-cube tray or flat bag
  • A little oil or water

Not for

  • Flowers you wanted to keep whole
  • Anything you plan to hang as a specimen

Label the year. Frozen green is a food, not a tincture.
