Moringa
Moringa oleifera
The drumstick tree — a tropical leaf-and-pod crop sold as a miracle, and honestly just a very good green.
Moringa is a fast West Asian and African tree whose leaf is a cooked green and whose long pods are a vegetable. Traditional South Asian use is as food first. Powdered-leaf marketing outran the kitchen. Culinary leaf and pod are the path. Root has a horseradish bite and a stronger, less food-like record.
Flavor
Leaf is spinach-peanut, a little matcha. Pod is asparagus-bean. Seed oil is bland and fine.
Parts used
