Part IX

Harvest & process

When to cut, how to dry, and how to store what you grow. Kitchen and medicinal crops only — restricted plants and poison-garden specimens have no harvest notes here.

Herbs hanging to dry with chamomile on a screen

Reminders

Harvest this week

A Monday-morning note of plants in season on this bench. On iPhone it is a native notification — it still fires if the app is closed.

On the website, the browser may ask to notify you.

How to process

Methods

Blossom & seed

Screen-dry flowers

Spread flower heads or seed in a single layer. Turn once. Chamomile, calendula, linden, and rose want shade and air, not a pile. They are done when the center is crisp and the perfume is still there. Rub through a sieve to drop insects and dust.

You will need

  • A window screen or cloth
  • A dark rack
  • A fine sieve

Not for

  • A wet week with no airflow
  • Sun-bleaching on a dashboard

The day you pick is the day you spread. A bag of damp blossoms is compost.

plantKitchen

Chamomile

Matricaria chamomilla

When
Fully open heads, dry morning, every few days through the flush.
Part

In the field
Pinch the head; leave the plant. A second flush often follows a midsummer cut.

Spikes with the first flowers open, dry morning.
Part
Flower spikes
In the field
Cut long stems. Keep a few for the bees.
Cure
