Almond mushroom
Agaricus subrufescens
A Brazilian button mushroom that smells of almond — food first, immune-glucan folklore second.
Agaricus subrufescens (often marketed as blazei or himematsutake) is cultivated on compost. Traditional and modern use leans on beta-glucans for immune tone. As food it is a cousin of the grocery button with a sweeter, almond scent. Transplant and autoimmune caution is the same as other immune-modulating fungi.
Flavor
Sweet almond, mushroom, a little anise when fresh — unusual and pleasant.
